The function of the gelatinization pot of the brewery equipment is to mix rice flour and part of the malt powder with water to boil, and to heat the mash to liquefy and gelatinize the starch.
The structure of the gelatinization pot is shown in the figure below. The body of the pot is cylindrical, the bottom of the pot is a spherical or ellipsoid interlayer, the top cover is butterfly-shaped, a stirrer is installed in the country, a heating device is installed at the bottom of the pot, and an insulating layer is provided on the outside of the pot. . The pulverized rice flour, malt powder and hot water are mixed evenly by the lower powder drum and the water inlet pipe, and then fed with the help of the propeller agitator to make the concentration and temperature of the viscous mash uniform, so that the mash is relatively thick. The heavy particles are suspended without settling to the pot wall to form a “bath of the pot” to prevent local overheating of the mash near the heat transfer surface.
In order to evenly distribute the heating steam, there is a steam inlet connected with the steam jacket by 4 short pipes. The steam pressure is 0.3-0.6MPa. The trachea valve is intermittently released. There is a thermal insulation layer outside the steam jacket of the gelatinization pot. The lid is provided with a double sliding door, a lower powder drum and an annular washing pipe. The top of the lid is provided with a steam riser, and the bottom of the steam riser is provided with an annular groove to collect the condensed sewage flowing down the wall of the steam riser and drain it from the condensed sewage pipe. to the ditch. There is also an exhaust air valve at the root of the steam riser, and its opening and closing degree can be adjusted according to needs. There is a cylindrical hood on the top of the steam riser to prevent birds from entering and pouring the tank in the wind and rain.
Gelatinization pot stirrer mostly adopts two-blade propeller type, and the rotation angle can be selected as 45° or 60°. The axial thrust can promote the circulation and good mixing of mash. The speed of the stirrer generally has two gears, the first gear is fast (30-40 r/min) for stirring and mixing water and raw materials; the first gear is slow (6-8 r/min) for heating and keeping the mash. Agitate to prevent raw material solids from settling and bottoming.
